One of the people that I would have LOVED to meet in person is Julia Child. There are so many recipes of hers that I would love to try and WILL try but one of my favorite recipes was her French Onion soup. To me, nothing is better than a delicious cup or bowl of French Onion soup on a cold winter or spring day. It just warms my heart. I'm not a big soup person to begin with but this is one of the soups that I absolutely love!
Growing up, there was a time in my life where we didn't have a lot of money for groceries. My mum always made a delicious dinner for us and we never went without the necessities in our lives. One of the meals that she made during this time was onion soup. We would have it for days with salad or by itself. So good and filling. And one of my favorite memories of growing up!
I knew that when I started Keto there was going to be different recipes that I have used in my cooking, that I would need to make Keto. This was one of them. You can eat this alone, with a side salad or even pour on top of some sautéed chicken and add some cheese to it! Drop a comment below if you try this recipe and what you think of it!

Keto French Onion Soup Slow Cooker
4 Large white onions (sliced thin - approx. 2 lbs.)
12 cups low-sodium beef broth
Sargento Swiss Cheese (24 slices)
2 tablespoon of butter
1.5 teaspoon of minced garlic
1 teaspoon dried ground thyme
4 bay leaves
2 teaspoons of Salt
3/4 teaspoon black pepper
2 Tablespoon of Worchester Sauce
Slice the 4 onions.
Add all the ingredients EXCEPT the cheese to the slow cooker. Stir to mix well.
Cook HIGH 3-4 hours or LOW 6-8 hours.
Preheat the broiler - I set mine to Low so I can keep an eye on the cheese melting and not burning.
In ovenproof bowls (I use oven safe crocks), ladle the soup evenly into bowls and then in each bowl arrange the cheese evenly.
Place bowls on a large baking sheet and carefully place under the broiler for a few minutes or until cheese is melted and starts to brown slightly.
