Cheeseburger in Paradise....or in a Muffin Tin!

Who doesn't love a good juicy cheeseburger!?


I sure do. My favorite brand for burg ers are Bubba burgers. They have to be the Angus Beef ones though as they are the best ones! I find them in the freezer isle of my local grocery store or even at Super Walmart.


With the new year and getting back on track, I have need to try some new recipes and not just got to the foods I have been eating the past few months (though Bubba's are always kept in the freezer for those nights that I just want to throw some burgers on the grill!)


Last night, I made these burger bowls and from prep to serving on the table, total time is 30 minutes! Can't really beat that!


Ingredients:

1 lbs of ground beef (I used grass fed 93/7 but you can use 85/15 or 90/10) 6 slices of cooked bacon, crumbled

1 teaspoon of worchester sauce 1/4 cup of white onion, chopped 1/4 cup shredded cheddar cheese

1/4 cup of mushrooms, chopped

1 tsp Salt

1 tsp Pepper

1 tsp Garlic Powder

2 pickles, chopped.


Instructions: Preheat oven to 400 degrees. Coat a 12 cup muffin tin with cooking spray (I used a 6 cup muffin tin)

Saute the onion and mushrooms together

Add a small handful of beef to each muffin tin, then press up the sides to create a cup.

Add the sauteed onions and mushrooms to the beef.

Add chopped pickles.

Top with shredded cheese.

Cook for 15 minutes or until the cheese is melted.


Serve with sugar free ketchup, mustard or some ranch dressing.
